Types

Raisins are commercially classified into the following types:

 

*Sultana Raisins (Dark Brown) / *Sultana Raisins (Light Brown)
Sultana raisins are prepared from different types of seedless grapes and are dried in the sun after sulfurizing. In terms of color, they are divided into four categories, including the numbers 7-8-9-10, of which number 7 is the darkest and number 10 is the lightest.Its light color is also known as Malayeri, Its sulfur content is slightly higher than its dark type and its flavor is a little bit sour. Sultana raisins are classified into four sizes in terms of size.
Coarse: 300-280 per 100 grams
Standard: 360-301 per 100 grams
Average: 500-361 per 100 grams
Small: 650- 501 per 100 grams
*Golden Raisins
Golden raisins are prepared from Sultana, which is treated with sulfur and dried in the shade, so their color is light and is from lemon yellow to golden and amber.
*Sun-Dried Raisins(Thompson)
Sun-dried raisins are dried without any treatment and with direct sunlight, so their color is dark and has a natural smell and taste.
*Green Kashmar Raisins
These types of raisins are long in appearance and in terms of color, They can be yellowish-green and 30-50% of them have seeds. It is very durable and has a very delicious taste grown in Khorasan Province-Kashmar.
*Gold Kashmar Raisins
 The same as green Kashmar raisins, The main difference is that sulfur is used to change the green to the golden color of raisins.
